Pecan Chevre Bites

Pecan Chevre BitesThis simple appetizer is infused with balsamic syrup and herbs and rolled in chopped toasted pecans. Though it has a richness reminiscent of a truffle it’s a much healthier option.

6 oz (168 g) Ontario chevre goat cheese
1 tbsp (15 mL) balsamic syrup*
1 tbsp (15 mL) minced parsley
1 tbsp (15 mL) finely grated lemon zest
1/2 cup (125 mL) finely chopped toasted pecans

In bowl, cream together goat cheese, syrup, parsley and lemon zest.

Using 2 teaspoons shape into balls. Place pecans in shallow dish and roll cheese, pressing gently to coat cheese in nuts.

Makes about 16 pieces.

PER (2 piece) SERVING: about 120 cal, 5 g pro, 10 g total fat (4 g sat fat), 3 g carb, 1 g fibre, 15 mg chol, 110 mg sodium. %RDI: iron 2%, calcium 6%, vit A 8%, vit C 2%  

* Balsamic syrup can be found at most groceries stores, but you can make your own by bringing 1 cup (250 mL) good quality balsamic vinegar to boil in a small saucepan over medium heat. Cook until vinegar reduces to a thick syrup-like consistency, about 20 minutes.
