PashkaThis is a twist on a traditional Russian dessert that is served with sweet breads at the end of a meal. With the citrus notes of fruit and the slight crunch of pistachios this rich dessert will be enjoyed with other dried fruit and nuts as well at the end of a special holiday meal.

1 large log (10 oz/300 g) Ontario chevre (soft, unripened goat cheese), at room temperature
1 cup (250 mL) 0% plain Greek yogurt
1/4 cup (50 mL) butter, softened
1/4 cup (50 mL) granulated sugar
2 tsp (10 mL) each grated lemon and orange rind
2 tsp (10 mL) pure vanilla extract
1/2 cup (125 mL) cut mixed peel
1/3 cup (75 mL) shelled pistachios

In a large bowl, using electric hand mixer, beat together goat cheese, yogurt and butter until very smooth. Stir in sugar, lemon and orange rind and vanilla. Stir in mixed peel and pistachios until evenly distributed.

Spoon into unused cheesecloth lined flower pot or deep 3 cup (750 mL) bowl. Cover with a plate that fits on top and weigh it down with heavy cans. Refrigerate for at least 12 hours or up to 24 hours. Discard whey, if any and turn out onto serving plate.

Makes 16 servings.

Tip: Cover and refrigerate for up to 4 days.
