Goat Cheese Spinach & Chive Phyllo

8 sheets phyllo pastry 8
3/4 cup melted butter or oil
4 oz Woolwich Dairy Chevrai Original Goat Cheese log
2 tbsp fresh chives or green onions (finely chopped) 30 mL
2 oz frozen, chopped spinach (drained)

Squeeze all of the water out of the spinach and place in a small bowl with the goat cheese and chives and blend together.

Lay one pastry sheet on a flat surface and brush with the melted butter. Lay another sheet on top and brush with butter. Repeat until 4 sheets are stacked (top sheet need not be buttered).

To make large turnovers: Trim rectangle pastry down to form a square. Cut into 4 equally sized smaller squares. Spread a heaping teaspoon of cheese mixture over the square. Fold corners points into the center and brush with butter.

Pre-heat oven to 375ºF, place pastries on a greased cookie sheet and bake on the middle rack for 8-10 minutes until pastries are golden brown.

Yield: 8 turnovers.
