Goat Cheese, Caramelized Onion and Steak Sandwiches

2 lbs sirloin steak 907 g
1 tbsp brown sugar 15 mL
1 tsp coarse black pepper 5 mL
2 cloves garlic, minced 2
2 tbsp olive oil 30 mL
1 tsp coarse salt 5 mL
4 crusty sandwich buns 4
4 oz Woolwich Dairy Original Chevrai goat cheese 113 g
1 bunch arugula 1
Caramelized Onions
2 tbsp olive oil 30 mL
4 lbs large sweet onions
1 tbsp sugar 15 mL
1/4 cup balsamic vinegar
salt and pepper

Trim fat from steak. Combine sugar, pepper, garlic, oil and salt. Allow to marinate for about one hour.

Heat oil in a large deep skillet. Add onions and cook about 10 minutes stirring occasionally. Reduce heat to medium and cook about 30 minutes. Add sugar and vinegar and cook gently, adding water if necessary, until onions are very tender and caramelized. This may take 30 to 60 minutes. Keep warm or reheat before serving.

Cut each bun in half horizontally leaving one edge attached. Grill steak 5 to six minutes per side until medium rare. Let steak rest 5 minutes and slice thinly on the diagonal.

Layer each bunch with a generous amount of goat cheese, followed by the fresh arugula. Place slices of steak in each bun, top with hot onions and serve.
